Food researchers at KNUST’s Department of Food Science and Technology have identified a harmful banned substance, Erythrosine (Red Dye No. 3), in some tomato pastes sold in Ghana.

The dye, which is not approved by the Ghana Food and Drugs Authority (FDA) for tomato products due to health risks, was detected in two sampled brands.

The study, published in the International Journal of Food Science, also found traces of starch, another prohibited additive.

Researchers urge the FDA to extend its scrutiny beyond tomato pastes to confectioneries, drinks, and other products containing Erythrosine.
